hi Jenny Ford here today I have a
special guest Christine van wagon and
I'm so excited that she's here with us
she is gonna show us an amazing recipe
but before we begin I just want to tell
you a little bit about her she owned her
own cooking school and she's an
inspirational speaker she's also a
grandmother and a mother which she says
is very near and dear to her heart which
I love I love that about you so I'm
gonna go ahead and let her start and
tell us what we're gonna make today
before we start that though I'm going to
just teach you one little skill that I
have learned that I think that you might
enjoy and this is how to do peppers
sometimes peppers are unruly that's a
choice is a way that you can do them
very quickly very easily and you can
even start having your kids learn how to
chop for you love that if love that they
learn how to do it with a pair of
scissors so we open that up and we'll
just start from this end you might want
to cut off a section of it like that
okay but then use your kitchen shears oh
I love that idea
awesome what a great idea just gonna go
ahead and snip this down like this and
then dice them in the other direction
kind of see that's yeah that's brilliant
don't forget that I always use this and
this is easy to use as well just pop
this it just that stem just pops off you
don't even have to cut it oh and you can
okay go ahead and chop that up so we're
gonna move ahead and just do a little
bit of that that's going to go in for
our recipe today I'm gonna let you go
ahead and finish doing yeah absolutely
I'd love to okay I'll slide them and you
just keep going that's perfect and you
want it diced right yes okay for this
particular recipe we only need about 1/4
of a cup ok perfect I can do that give
or take so let's go ahead and start with
our chick peas chick being eat peas are
like their garbanzo beans basically and
you get them in a can and then you want
to drain them and rinse them because you
know that kind of slimy stuff that's on
yes yes slime is not a preferred texture
I can
and then what you're going to do is
you're just going to smash them you can
use a potato masher you can use a pastry
cutter or today I'm just doing this with
a fork wonderful I think that this is a
very quick recipe and it is one that you
can use for a snack I even eat it for
breakfast because oh wow hat YUM with
protein and veggies and great flavor but
I really kind of like savory things for
breakfast we lived in Asia for about
four years and they don't eat sweet
things for breakfast they they eat
really savory things and so we learned
to do that and I really liked this
recipe for that reason it's perfect
sounds perfect now this recipe can be
made up and kept in your refrigerator
for about three days oh that's nice
we're gonna talk about how you serve it
in three nice different ways you can
serve it in a sandwich like some
whole-grain bread maybe oh yeah I'm
toast it mhm and spread it on there put
some kale or you know spinach or lettuce
on that which is always really good so
you can see that this looks kind of like
tuna yeah it does let you start smashing
it up just smash it up and don't worry
about we're gonna put some other stuff
if you tasted this right now you'd go
not so much not yeah yeah
so I need to tell you I made this for my
family for my husband first my husband
and children and they didn't know what
it was I know
okay give you something really
nutritious okay yeah I ever say that
yeah that's an immediate no things right
for kids and yeah well sometimes my
family will say mom this tastes like
it's supposed to be good for me so you
don't have to put it in your recipe book
yeah yeah yeah so here we have this is
all flaked up all ready to go and so now
we're just going to put together a half
a cup of finely chopped celery you want
to make sure these things are chopped up
pretty fine oh I better maybe a bit of
chopped my green my peppers a little
finer it's your favorite
oh no okay okay all right and then we're
going to put in about two tablespoons of
red onion tape just about like like that
we're also gonna put in some pickle
relish yeah if you don't have pickle
relish then just go ahead and dice up
whatever kind of pickles we're gonna put
those wonderful and sweet or savory
sweet pickles or savory either way like
okay our family really likes bread and
butter pickles oh yeah not sweet and
they're not right and so everybody's
happy they're perfect they are okay now
we're gonna put in our bell pepper
okay yes like that in don't mean it a
saw go ahead in yep do you want all is
that about 1/4 a cup there maybe a
little more a little bit more okay so
you can see this is quite it's getting
to be quite colorful so we're going to
mix those together
and then we're gonna put in some
dressing we're gonna use some mayonnaise
now you can use a vegan ease if you
prefer okay you can use a little fat you
can use whatever you want
that's good has anybody for all types of
people all types of diets whatever they
accommodate absolutely okay we're gonna
put in two tablespoons of mayo and about
a heaping teaspoon of mustard okay just
all ingredients we usually have at home
right right you know you don't have to
go to the gourmet short store and say
can you show me you have this it's true
I had to do that not too long ago and
even the grocer was I've never they were
puzzled about that so what I did as I
left it out exactly I will never know
there you go yeah it's good yeah so
anyway can you see how this is starting
to look quite beautiful yeah I love the
color in there too it's really pretty
um you can use green onion if you prefer
I happen to have red onion in my pantry
so that's what we're using and then we
have a few other little ingredients now
we're going to put in 1 clove of garlic
okay
perfectly minced now is put it through
your garlic press yep I know a lot of
people buy that garlic that is in a jar
that yeah there you go yes that is not
my friend okay be good smells and I'm
just gonna teach you a little good I
love this I love it it's not fresh I
mean somebody dies that probably six
months ago which isn't long
time it is so long yeah and then you
usually have to buy it in a big bottle
ah and yes how long is it gonna take a
long time for bottom a long time to get
through that yes I say fresh fresh fresh
fresh all the time I'm with you there
I'm totally with that now the other
thing we're gonna put in here is a
little bit of dill can some salt now
today I'm using dried dill because I
have it perfect okay fresh dill is good
too
but we're gonna put about a teaspoon in
maybe about a teaspoon wonderful and
then we're gonna put 1/4 of a teaspoon
of salt this is very fine sea salt Oh
sea salt okay perfect and we're just
gonna put a little bit of pepper in a
lot of this is for color yes sure
absolutely then you can always adjust
the seasoning so I'm just giving you a
basic recipe today and then you can
adjust it however you want
doesn't that look fabulous oh look how
beautiful I love the colors in there and
some texture that I wish you could smell
it you'll have to make it if so smells
delicious yes so now it's time how are
we gonna eat this well lots of choices
to eat it is what you're saying
what do you think tell me some options
we have okay we can add other vegetables
to it I have some cake Otto's here we
have some Tomatoes okay we also have
spinach yep and kale so we can add that
okay and this right here am i cute yes
yes I your your brightness okay and also
some these are fun these little tiny
piggies these little fins oh I love
those yeah those are good I also have
this whole green rolls and I'm guessing
you made those you know what I did not
you said it I'm shocked that's okay
that's right I know where to buy the
best okay that's that's what matters you
don't have to always make it you can
find the bus so by the best I have these
little buns here a little bit of kale
okay here love that oh let's
get rid of the stem okay no stems stem
is not a fun thing either so we're just
gonna put a little bit of kale in there
okay and they're things this scoop right
my mouths watering
that's so good now at this point you
could add other things okay
you could add sliced avocado sure you
could do to me tomatoes that's some
Tomatoes or would you have I would
definitely add some Mayo as an avocado
that's just yeah I'll oh yes yes pretty
standard absolutely you put them on the
side right now perfect perfect and
another way that you can do that's
really one of my favorite ways is to go
ahead and make a bit of greens some
spinach yeah we'll just put some spinach
I was add a little bit of kale okay you
can never have too much kale but they
have kind of one too that you have to
require nice for that absolutely or you
can sneak it in you know what yeah yeah
so then once again we're just gonna put
this on top of this oh and love fat oh
that's a great idea I love that yes oh
yeah look at that oh that's great yeah
once again you can add slices and mutter
with that okay and really quite
delicious now this is really fun because
I can make these early in the morning oh
yeah wrap them up and have them in my
car Oh see especially when you're on the
go then I don't have to do any sort of
fast food or you know if you get hungry
you can have something really healthy
yeah so we're just gonna how simple is
that how simple is that I love that what
a great idea these little fins are good
you can buy these just in the grocery
store and once again you can just put on
whatever you'd like
you know usually what I do is I just
have the sandwich like this okay and
then I'll slip it in the bag yes
and bin in a separate bag I'll have my
greens and my tomato ah this yeah kinds
of soggy yes but I think that you would
probably enjoy that better if it what
because soggy is not
texture oh it's not so great you're
right so let's put a little avocado in
there oh why don't we yes I would oh I'd
love to yeah I mean it looks good it
smells delicious but you gotta taste it
right right right right right so what
else do you want to put on this I yes
yes they'll be delicious kale spinach I
like either one okay I'll let you put
choose what you think I'll do a little
spinach are you sharing with me
are you eating part of this with me or
you just buy okay okay I like my greens
as you can tell how many ah it is a lot
so yes the end of the day you have to
feel like a rabbit yes yeah you know
yeah exactly and also put mayo or
mustard or anything okay and the bread
sure if you'd like that but let's just
cut this and we'll just have a little
tip oh why don't we I'm excited oh
you're doing great
oh that's a wonderful idea
yes okay there you go I've got my piece
all right uh-huh

and so simple is love this idea so for

Chickpeas or garbanzo beans are one of my favorite legumes to use as an ingredient in so many different recipes. This chickpea salad sandwich vegetarian recipe is so easy to make in just minutes, and you don't even need to know how to cook to make it. Chickpeas are a great source of vegan protein, and are perfect for those looking to increase their protein intake while eating vegan or vegetarian recipes. Chickpea Salad Ingredients needed: 1 (15 oz) can chickpeas, drained and rinsed 1/2 cup finely chopped celery (about two stalks) 2 Tbsp. finely chopped red or green onion 1/4 cup finely chopped red bell pepper 2-3 Tbsp. mayonnaise (or Veganaise or your choice of oil) 1 clove garlic, minced 1 1/2 tsp. minced dill 1/4 tsp. fine-grained sea salt black pepper to taste In a large bowl, mash the chickpeas until flakey in texture. Stir in celery, onion, pickles, bell peppers, mayo, and garlic. Combine well. Add the mustard and dill. Adjust seasonings to taste. Serve as a sandwich, salad, or on crackers.
